Teff
Teff is an ancient grain native to the Horn of Africa, corresponding to modern-day Ethiopia. For thousands of years Ethiopians have used teff flour as the main ingredient for their staple food Injera, a sourdough-risen flatbread.
The name teff originates from the Amharic word teffa, meanings “lost” in the Ethiopian language, and refers to the very tiny size of teff seeds – easily lost during harvesting!
